Lush Mush Aubergine Parmigiana

The secret here is to bake the dish for long enough to allow the aubergine to soften and the flavours of the sauce to release and concentrate.

This recipe serves 2 as a main meal or 4 as a side dish.

You will need:

  • 2 aubergines, thinly sliced
  • 3 tbsp olive oil
  • 300g pot of Lush Mush Sauce
  • 125g ball mozzarella, torn (optional)
  • Fresh basil (optional)
  • 25g grated parmesan or dairy free alternative
  • Salt & pepper to taste

 

Step 1

Pre-heat the oven to 200c. Pre-cook the aubergine slices on a lightly oiled frying pan, griddle or on a George Foreman type grill.

Step 2

Layer half the aubergine slices in an ovenproof dish. Spoon over half a pot of Lush Mush sauce. Add salt and pepper to taste.

Optional step:dot the mozzarella evenly on top, then scatter over half the basil.

Step 3

Top with the rest of the aubergine, the other half of Lush Mush sauce, add salt and pepper to taste, then the parmesan or alternative.

Bake for 35-40 minutes, till golden and bubbling.

Optional step: Garnish with the remianing basil leaves.
