This pie is really easy to make. You can use the filling in any type of pastry case and you can substitute different cheese for the feta.
Heat the oil in a large pan. Add in the onion and fry until the onion has softened then add in the garlic and pine nuts fry for a further 2-3 minutes.
In a microwave, cook the sweet potato on full power for about 5 minutes (remember to pierce the skin a bit first) until the potato is soft, then peel off the skin and mash the flesh into the pan. Add in the spinach, feta, oregano and Lush Mush sauce and season to taste. Mix well.
In an oven proof dish, lay one sheet of filo pastry down, top half hanging outside of the dish, and brush on melted butter (or olive oil). Overlap one half of the second sheet of pastry across the first sheet and butter it.Keep going round until the bottom of the dish is covered in pastry and all overlapping top ends are fanned out around the outside of the dish. Add the filling and then fold the overhanging top ends into the centre to cover the filling completely and butter the top of the pastry lid. Bake for 25mins at 200c.
