Crusted Cod


This recipe is really simple. It takes minutes to prepare and results in a beautiful, colourful dish that is healthy and tasty. A treat for the whole family.

Step 1

Heat the oven to 220c.

For each person, use around 200g of cod or another white fish. 

Place the raw fish on a lightly greased oven tray.

Optional: Season with salt and pepper.

Step 2

On each fillet, spread one tablespoon of Lush Mush Sauce and squeeze a few drops of lemon  juice on top.

Step 3

For the crumb, you can simply use panko breadcrumbs or for each fillet;

Optional: combine  1-2 tablespoons of panko breadcrumbs, a little lemon zest, finely chopped herbs such as parsley or chives and 1tsp olive oil.

Then gently pat down some of the crumb mixture on top of the sauce on each fillet and bake for about 20mins or until the crust has turned golden.
